Sugar Changed the Modern Diet More Than People Realize
Something changed in the modern diet.
And a growing number of researchers believe sugar may be a major part of the story.
Rates of obesity, diabetes, and nonalcoholic fatty liver disease have climbed dramatically over the years.
Even in children.
That has caused many scientists, doctors, and nutrition writers to ask difficult questions about processed food and sugar consumption.
Science writer Gary Taubes once said:
“Among Americans, diabetes is more prevalent today than ever, obesity is at epic proportions, and nearly ten percent of children are thought to have nonalcoholic fatty liver disease. Sugar is at the root of these problems.”
Not everyone agrees on every detail of nutrition science.
But many people do agree on one thing:
modern diets contain far more sugar and processed food than they used to.
That realization is one reason more families have started paying closer attention to food labels, ingredients, and everyday eating habits.
Not perfectly.
Just more consciously than before.
